Very fruity cava due to the fermentation of the base wine at controlled temperatures between 14 and 16 ° C retaining much of the aromatic fraction.

Elaboration

The varieties used for the production of base wine for cava are, Macabeo, Xarel·lo and Parellada. The harvest begins at the end of August with the Macabeo variety and ends at the beginning of October with the Parellada variety. The collection of grapes is done manually in containers or boxes of 25 kg. From these grape varieties and by means of pneumatic presses, the must is obtained. The wort is left to rest for 24 hours in order to precipitate the particles it contains. Once cleaned and settled the must is moved by varieties to the fermentation tanks. The first fermentation takes place in stainless steel tanks of 600,000 l at a controlled temperature between 14 and 16 ° C. In these tanks, the sowing of selected yeasts is carried out, which come from the Freixenet collection, and the first fermentation begins. Once the first fermentation is finished, between 10 and 12 days, and after a series of racking and treatments, the base wine is prepared for coupage and subsequent bottling, where it will carry out the second fermentation in the bottle.

Tasting notes

Light cava and appreciated for its great freshness that makes it very current, formed by a coupage with the three traditional varieties of the Penedès. Pale yellow color with greenish tones, bright. Abundant, fine and persistent bubble, very integrated, good carbonic detachment forming a good crown. Fine and delicate aromas, predominating shades of green fruit (apple, pear) light nuances of ripe tropical fruit (banana, pineapple notes), citrus backgrounds and fresh herbs, very well harmonized with aromas of medium aging. Fresh in the mouth, good carbonic behavior, broad in flavors appearing again the notes of green fruit and citrus. Lightweight, with clean and elegant retronasal route.
